The Black Gold of the Andes: An Odyssey of Flavor and Effort.
The history of coffee in Colombia is not merely a tale of agriculture; it is the very fabric of our identity. It is a dance between man and mountain that has defined our destiny for centuries. Since the first seeds crossed our borders in the 18th century, coffee has been the engine that drove progress and solidified the farming family as the core of our society.

1. The Threads of Time: From the East to the Heart of the Country
Tradition has it that coffee entered Colombia from the east, coming from the French Antilles. The Jesuit priest Francisco Romero is remembered as the great visionary who, in his parish of Salazar de las Palmas, imposed a singular penance: for each sin, the parishioner had to plant coffee trees. This "productive evangelization" allowed an unknown crop to spread through the mountain ranges, finding an eternal home in the Andean soils.
By the end of the 19th century, production shifted to the center and west of the country. However, the 21st century brought a paradigm shift: the search for absolute quality over massive quantity. It is here that Huila emerges as the new sovereign of global coffee.
2. The Reign of Huila: Geography of Excellence
In recent years, the department of Huila has experienced an unprecedented rise. Today, Huila is consolidated as the engine of Colombian coffee growing, contributing close to 19% of national production. For 14 consecutive years, we have maintained this leadership, thanks to the efforts of more than 86,000 coffee-growing families.
Why are we the best? (Our Terroir) Our land enjoys a privileged location at the junction of the Central and Eastern mountain ranges. This geography creates a "funnel" of winds that regulates the temperature. Furthermore, the influence of the Central Mountain Range has enriched our soils with volcanic ash deposits loaded with essential minerals. These soils nourish the coffee tree from the root, giving our bean that bright malic acidity and complex notes that are the hallmark of our region.
3. Huila in the World: Figures and Awards of a Giant
Huilense excellence is not only measured in cups, but in global results. Between 2024 and 2025, Huila has led coffee exports in Colombia, achieving growth of over 80% in its foreign sales. Countries like Canada, Germany, and Belgium have surrendered to the sensory profile of our bean, positioning the department as a high-value exporting powerhouse.

This commercial success goes hand in hand with international prestige. Huila coffee is a frequent visitor to the podium of the Cup of Excellence and national competitions such as Colombia Land of Diversity, where our coffee growers often sweep awards for attributes such as acidity, body, and balance. These accolades confirm that in our mountains we not only cultivate coffee, but we perfect the global quality standard.
4. A Legacy of Family Excellence
At Café Cacica Gaitana, we inherited this passion from Don Dagoberto and Doña Edilma Calderón. For us, each bean is not just a commodity; it is a tribute to this centuries-old history that we proudly celebrate today in Timaná. Our daily work is to ensure that this golden legacy of Huila reaches your palate intact, respecting the tradition of those who taught us to love this land and to understand the language of the mountain.
